Omelette Muffin Recipe – High-Protein Breakfast

These easy egg muffins are the perfect healthy breakfast for your family. Use them for meal prep — make a batch of mini baked omelettes ahead of time and refrigerate them for later. Our easy omelette muffins are filled with protein and can be customized to include your favorite veggies. Try this simple breakfast recipe today!

Ingredients
  

  • 6 eggs free-range
  • ½ cup vegetables (of your choosing) diced
  • ¼ tsp sea salt
  • ⅛ tsp fresh black pepper
  • ⅛ cup homemade mayonnaise (or vegenaise, or coconut milk)
  • ⅛ cup water

Instructions
 

  • Preheat oven to 375° F.
  • Mix everything together.
  • Line a muffin pan with paper or silicone muffin cups.
  • Bake in silicone muffin cups for 18–20 minutes, or until a toothpick can be inserted into a central muffin and pulled out cleanly.
