No-Bake Key Lime Cheesecake

Easy and Healthy! Try our No-Bake Key Lime Cheesecake! With no wheat flour, this gluten-free, easy and tangy dessert will become a new favorite!

Ingredients
  

Filling: Reduce

  • 1 cup cream
  • 2 limes zest and juices (or 4 Key limes)
  • 1/3 cup xylitol
  • 1 pinch salt

Filling: Beat together

  • 1 block cream cheese soften (8 oz)
  • 1/2 tsp pure stevia extract or to taste

Crust:

  • 2 cups almond flour
  • 1/3 cup xylitol
  • 1/4 tsp salt
  • 1/4 tsp stevia (or to taste)
  • 1/2 stick butter (melted)

Instructions
 

  • Put Reduction on Stove (Takes about an hour or two over medium low heat until simmering)
  • Mix crust dry ingredients.
  • Add melted butter and mix until combined
  • Press into 9-10" pie plate (or double recipe to fit into 9x13 baking dish)
  • Put in freezer to harden
  • Beat cream cheese until fluffy
  • Add reduction and Stevia to taste until they combine
  • Pour into cooled crust
  • Let cool in fridge for approx. 4 hours until set
